Ingredients

  • 3 cups plain Greek yogurt
  • 1 1/2 cups mixed berries (strawberries, blueberries)
  • 1 cup soy-free granola or oats + nuts mix
  • 3 tbsp honey
  • 3 tbsp chia seeds (optional)

Instructions

1

Wash the mixed berries thoroughly under cold water and pat dry with a paper towel.

2

In a medium-sized bowl, combine the plain Greek yogurt with the honey. Stir until the honey is well incorporated.

3

If using, mix in the chia seeds into the yogurt and honey mixture. Let it sit for a couple of minutes to allow the seeds to swell slightly.

4

In a serving glass or bowl, layer with 1/3 cup Greek yogurt mixture at the base.

5

Add a layer of 1/4 cup mixed berries on top of the yogurt.

6

Sprinkle 2 tablespoons of the granola or oats + nuts mix over the berries.

7

Repeat the layering process (steps 4-6) until all ingredients are used, finishing with a layer of berries and a sprinkle of granola on top.

8

Serve immediately, or refrigerate for up to an hour if you prefer a chilled parfait.
