  • 8 oz whole-grain spaghetti
  • 1 lb lean ground turkey
  • 28 oz canned crushed tomatoes
  • 1 medium onion
  • 3 cloves garlic
  • 2 tsp Italian seasoning
  • 2 tbsp olive oil
  • 1/4 cup Parmesan cheese
  • 6 cups mixed salad greens
  • 1 medium cucumber
  • 1/4 cup vinaigrette
  • to taste N/A salt
  • to taste N/A black pepper

Instructions

1

Bring a large pot of salted water to a boil. Cook the spaghetti according to package instructions until al dente. Drain and set aside.

2

In a large skillet, heat olive oil over medium heat. Add the onion and garlic, sautéing until the onion is translucent, about 5 minutes.

Stir in the canned crushed tomatoes and Italian seasoning. Season with salt and black pepper to taste. Simmer the sauce on low heat for 10-15 minutes to allow the flavors to meld.

Toss the cooked spaghetti into the meat sauce, gently mixing until well coated. Let it heat through for another 2-3 minutes.

6

Divide the pasta among plates and top with grated Parmesan cheese.

7

For the salad, slice the cucumber and combine with mixed greens in a large bowl.

8

Drizzle vinaigrette over the salad and toss until coated. Season with salt and pepper to taste.
