Vegetarian Bibimbap with Seasoned Tofu & Brown Rice

Ingredients

  • 360 g Brown rice
  • 250 g Firm tofu, pan-seared and sliced
  • 100 g Spinach, blanched and seasoned
  • 100 g Bean sprouts, blanched
  • 2 tbsp Gochujang
  • 1 tbsp Sesame oil
  • 1 tbsp Soy sauce
  • 2 cloves Garlic, minced
  • 1 tsp Rice vinegar
  • 1 tbsp Vegetable oil

Instructions

Prepare the sauce by mixing 2 tbsp gochujang, 1 tbsp soy sauce, 1 minced garlic clove, 1 tbsp sesame oil, and 1 tsp rice vinegar in a bowl. Set aside.

Heat 1 tbsp vegetable oil in a large skillet over medium heat. Add the cooked brown rice and lightly stir-fry it for 5 minutes until it’s heated through. Season with a pinch of salt and pepper to taste. Transfer the cooked rice to a large bowl.

In the same skillet, add the remaining minced garlic clove. Stir-fry the spinach for 1-2 minutes until fragrant and lightly seasoned.

Assemble the bibimbap by placing the brown rice at the bottom of individual serving bowls. Then, arrange the blanched spinach, julienned and sauteed zucchini, julienned and sauteed carrot, blanched bean sprouts, and sliced tofu neatly on top of the rice.

Drizzle the gochujang sauce over the top and finish with a sprinkle of sesame seeds.

Before eating, gently mix all the ingredients together in the bowl until everything is evenly coated with the sauce.
