Stuffed Bell Peppers with Quinoa and Black Beans

Ingredients

  • 5 whole Bell peppers
  • 2 cups Cooked quinoa
  • 1 can (15 oz) Black beans
  • 1 can (14.5 oz) Diced tomatoes
  • 1 medium Onion
  • 2 cloves Garlic
  • 1 tsp Cumin
  • 1 tbsp Olive oil

Instructions

Preheat the oven to 375°F (190°C).

Cut the tops off the bell peppers and remove the seeds and membranes. Set aside.

Chop the onion and mince the garlic cloves.

Heat 1 tablespoon of olive oil in a skillet over medium heat. Add the chopped onion and garlic, and sauté until the onion is translucent, about 5 minutes.

Drain and rinse the black beans. Add them to the skillet along with the canned diced tomatoes, cumin, salt, and pepper. Stir well and cook for another 5 minutes.

Add the cooked quinoa to the skillet and mix until all ingredients are well combined. Taste and adjust seasoning if necessary.

Place the bell peppers in a baking dish, cut side up. Fill each bell pepper with the quinoa and black bean mixture.

Cover the baking dish with foil and bake in the preheated oven for 30 minutes.

Remove the foil and bake for another 10 minutes or until the peppers are tender.

Remove from oven and allow to cool slightly before serving. Serve warm.
