Ingredients

  • 800 g plain Greek yogurt (2% fat)
  • 120 g nut-free granola
  • 400 g mixed berries (strawberries, blueberries, raspberries)
  • 4 tsp honey or maple syrup
  • 1 zest lemon zest (optional)

Instructions

Wash and gently pat dry the mixed berries. If using strawberries, hull and slice them into thin slices.

In a medium bowl, mix the plain Greek yogurt with 2 teaspoons of honey (or maple syrup) until well combined. Taste and adjust the sweetness if necessary.

Place a few spoonfuls of the yogurt mixture at the bottom of each serving glass or bowl. Use about 1/4 of the yogurt per glass if making 4 servings.

Add a layer of mixed berries on top of the yogurt in each glass, spreading them in an even layer.

Sprinkle a layer of nut-free granola on top of the berries, using about 1/4 of the total per glass.

Repeat the layering process by adding another layer of the yogurt mixture, then the mixed berries, and finish with a topping of granola.

Drizzle the remaining honey evenly over the top of each parfait and sprinkle with lemon zest if desired.

Serve the parfaits immediately or refrigerate them for up to an hour to allow flavors to meld before serving.
