Rinse the lentils under cold water and set aside.
Peel and chop the carrots, slice the celery, and finely chop the onion.
In a large pot, heat the olive oil over medium heat. Add the chopped onion, carrots, and celery. Sauté until the vegetables are softened, about 5 minutes.
Add the rinsed lentils to the pot and stir well to combine with the vegetables.
Pour in the vegetable or chicken broth and add the thyme and bay leaf. Stir to combine.
Bring the mixture to a boil, then reduce the heat to low, cover, and let it simmer for 25-30 minutes, or until the lentils are tender.
While the soup is simmering, preheat your oven to 180°C (350°F).
Slice the whole wheat baguette into 1 cm thick slices and place on a baking tray. Toast in the oven for about 5-7 minutes until crispy.
Remove the bay leaf from the soup. Season with salt and pepper to taste.
Serve the hot lentil soup with the slices of toasted whole wheat baguette on the side.
