Slice the chicken into thin strips and season with a pinch of salt and black pepper.
Peel and finely chop the garlic and ginger. Set aside.
In a pot, bring the chicken broth to a gentle simmer.
In a separate pan, heat vegetable oil over medium heat. Add the chopped garlic and ginger, sauté for 1-2 minutes until fragrant.
Add the seasoned chicken strips to the pan and cook until they are fully cooked and slightly golden, about 5-7 minutes.
Add the cooked chicken, garlic, and ginger mixture to the simmering chicken broth. Let simmer for 5 minutes.
In a separate pot, bring water to a boil and cook the ramen noodles according to package instructions. Drain and set aside.
Carefully crack the egg into the simmering broth and let it poach for 4-5 minutes until the white is set but the yolk is still slightly runny.
Add soy sauce to the broth and adjust seasoning with salt and pepper to taste.
In a bowl, place the cooked ramen noodles. Ladle the hot chicken broth with chicken strips and poached egg over the noodles.
Garnish with chopped green onions and serve hot.
