Ingredients

  • 5 whole bell peppers
  • 2 cups cooked quinoa
  • 1 can black beans
  • 1 cup corn
  • 1 teaspoon cumin
  • 1 teaspoon paprika
  • 1/4 cup fresh cilantro
  • 2 tablespoons olive oil
  • 1 teaspoon salt
  • 1/2 teaspoon black pepper
  • 1/2 cup shredded cheese (optional)

Instructions

Preheat the oven to 375°F (190°C). Prepare the bell peppers by halving them and removing the seeds and ribs. Arrange them cut side up in a baking dish.

In a large bowl, combine the cooked quinoa, black beans, corn, cumin, paprika, salt, and black pepper. Mix well to incorporate all the flavors.

Stuff each bell pepper half with the quinoa mixture, pressing it down gently with a spoon to ensure it's packed in well.

Drizzle olive oil over the stuffed peppers. If using, sprinkle shredded cheese on top of the stuffing.

Cover the baking dish with aluminum foil and bake in the oven for 25 minutes. Remove the foil and bake for an additional 10 minutes or until the peppers are tender and the cheese (if added) is melted and slightly golden.

Garnish the stuffed peppers with freshly chopped cilantro before serving. Enjoy while warm.
