Preheat your oven to 180°C (350°F).
Place the slices of rustic whole-grain bread or baguette on a baking sheet and brush them lightly with olive oil on both sides.
Place the bread in the oven and toast for 5-7 minutes, or until they're golden and crispy. Remove from oven and set aside.
While the bread is toasting, slightly heat the roasted vegetables in a skillet over medium heat for about 2-3 minutes, just until warmed through. Season with a pinch of salt and black pepper.
Spread 20 g of goat cheese on each piece of toasted bread. Divide the warmed roasted vegetables evenly among the slices, layering them over the goat cheese.
Top each tartine with a handful of arugula or mixed greens.
Drizzle about 1/2 tablespoon of balsamic glaze over each tartine for a sweet finishing touch.
Serve immediately while the tartines are warm and enjoy!
