Ingredients

  • 2 large Eggs
  • 1/2 cup Baby spinach
  • 1/2 cup Mushrooms
  • 1 oz Feta or goat cheese
  • 1 slice Whole-wheat bread
  • 1 tsp Olive oil or butter
  • 1/8 tsp Salt
  • 1/8 tsp Pepper

Instructions

Crack the eggs into a bowl, add salt and pepper, and whisk until well combined.

Heat 1/2 teaspoon of olive oil or butter in a non-stick skillet over medium heat.

Add the sliced mushrooms to the skillet and sauté for about 3 minutes or until they start to brown.

Add the baby spinach to the skillet and sauté for another 1-2 minutes until wilted.

Pour the whisked eggs into the skillet over the spinach and mushrooms, tilting the pan to spread the eggs evenly.

Cook the omelet gently, lifting the edges with a spatula to let the uncooked eggs flow underneath.

Once the eggs are mostly set, crumble the feta or goat cheese over one half of the omelet.

Fold the omelet in half over the cheese, cover the skillet, and let it cook for another 1-2 minutes until the cheese is melted and the eggs are fully cooked.

Meanwhile, toast the whole-wheat bread until golden brown.

Serve the omelet with the whole-wheat toast on the side. Enjoy your meal!
