Rinse the mixed berries under cold water and drain them well. If using strawberries, hull and cut them into quarters. Leave blueberries and raspberries whole. Set aside.
In a medium-sized bowl, mix the plain Greek yogurt with 2 teaspoons of honey (or maple syrup) and the zest of one lemon. Stir until well combined and smooth.
Prepare four serving glasses or bowls. In each glass, start with a layer of 100g of the yogurt mixture, followed by a layer of 30g nut-free granola.
Next, add a layer of 100g of the mixed berries on top of the granola in each glass.
Repeat the layering process: Add another layer of 100g yogurt, followed by 30g granola, and finally, 100g mixed berries in each glass.
Drizzle the remaining 2 teaspoons of honey (or maple syrup) evenly over the top of the parfaits.
Optionally, garnish each parfait with a sprinkle of additional lemon zest for extra flavor and visual appeal.
Serve immediately or chill in the refrigerator for a refreshing treat later.
