In a small bowl, mix Greek yogurt with half of the honey to sweeten it. Set aside.
Wash the berries thoroughly. If using strawberries, hull and slice them into thin pieces.
In a clean glass or cup, add half of the sweetened yogurt as the first layer.
Add a layer of half of the mixed berries on top of the yogurt.
Sprinkle half of the granola over the berries, allowing it to settle evenly.
Repeat the layers with the remaining yogurt, followed by the remaining berries and granola.
Top the parfait with the chopped walnuts for added crunch and drizzle the remaining honey on top.
Serve immediately for the best texture, or refrigerate for up to an hour if you prefer it slightly chilled.
