Layered, bright and texturally addictive: tangy Greek yogurt contrasts with sweet-tart mixed berries, crunchy low-sugar granola and nutty chia-almond scatter. A touch of honey and lemon zest lifts the flavors while chia seeds add silkiness and fiber — a restaurant-quality parfait that's quick to assemble but feels special.
Prep the fruit and nuts: Rinse the mixed berries gently and pat dry on paper towels. Hull and slice large strawberries so all pieces are roughly the same size (this makes every spoonful balanced). Toast the sliced almonds in a dry skillet over medium heat for 2–3 minutes, shaking the pan, until fragrant and lightly golden — toasting deepens their flavor and adds a warm, nutty crunch.
Brighten the berries (optional but recommended): Toss the berries with a tiny pinch of salt and the lemon zest and let them sit 3–5 minutes. The salt amplifies the berries' natural sweetness; the lemon zest adds an aromatic citrus lift without watering them down.
Sweeten the yogurt (optional): If you like a slightly sweeter parfait, stir the tablespoon of honey (or maple syrup) together with the yogurt and the pinch of salt. Mixing the sweetener into the yogurt allows you to control sweetness uniformly; the pinch of salt balances sweetness and brings out dairy richness.
Layer the parfait: Choose two clear glasses or jars so you can see the layers. Spoon about one-third of the yogurt into the bottom of each glass to create a creamy base — starting with yogurt provides a stable platform so the granola won’t get soggy immediately. Follow with a layer of berries (about one-quarter of the fruit), then a sprinkle of chia seeds (roughly 1 teaspoon per glass) and a tablespoon of granola per glass. Repeat: another third of yogurt, remaining berries, more chia, and finish with the remaining yogurt and the rest of the granola on top for textural contrast.
Finish and garnish: Scatter the toasted sliced almonds on top and, if you used lemon zest, add a small extra pinch on each parfait for aroma. Pressing the final granola/almond layer lightly helps it sit nicely and gives a satisfying first crunch.
Serve immediately (or chill briefly): Serve right away so the granola stays crunchy. If you prefer the chia to soften and bind the parfait like a mini pudding, cover and chill for 20–30 minutes — chilling allows chia to absorb moisture and swell, creating a creamier mouthfeel but will mellow the granola crunch.
Notes on make-ahead: If preparing ahead for a few hours, store the granola separately and add just before serving. If you need to transport, assemble with granola and almonds in a separate small container and combine at the last minute to preserve texture.
