Preheat the air fryer to 375°F (190°C).
Season the chicken breast pieces with salt and pepper.
In a small bowl, lightly beat the eggs with the milk, and add a pinch of salt and pepper for seasoning.
Dip the chicken breasts in the egg mixture, ensuring they are fully coated.
Melt 1 tablespoon of butter on a griddle over medium heat.
Place the coated chicken breasts on the griddle and cook for about 5-6 minutes on each side, until golden brown and cooked through. You can also cook the chicken in the air fryer for 15 minutes, flipping halfway through.
Remove the chicken from the griddle/air fryer and let it rest for a few minutes, then slice thinly.
Lay out two flour tortillas and sprinkle half of the cheddar cheese evenly over them.
Distribute the sliced chicken evenly over the cheese, then top with the remaining cheese and the other tortillas.
Melt the remaining 1 tablespoon of butter on the griddle over medium heat.
Cook the quesadillas on the griddle for about 3-4 minutes on each side, until the tortillas are golden and the cheese is melted.
Cut the quesadillas into wedges and serve warm.
