Preheat your oven to 375°F (190°C).
Cook the jumbo pasta shells in a large pot of salted boiling water until al dente, about 8-10 minutes. Drain and set aside to cool slightly.
In a mixing bowl, combine ricotta cheese, spinach, Parmesan cheese, salt, and black pepper. Mix until well blended.
Fill each jumbo pasta shell with a generous tablespoon of the ricotta-spinach mixture.
Spread half of the marinara sauce on the bottom of a baking dish. Arrange the stuffed shells on top of the sauce.
Pour the remaining marinara sauce over the stuffed shells and sprinkle mozzarella cheese on top.
Cover the baking dish with foil and bake in the preheated oven for 20 minutes. Remove the foil and bake for an additional 5 minutes, or until the cheese is bubbly and golden brown.
While the shells are baking, prepare the side salad. In a large bowl, toss mixed greens with vinaigrette dressing.
Serve the baked stuffed shells hot, alongside the fresh mixed greens salad.
