Rinse the quinoa under cold water. In a saucepan, bring 2 cups of water to a boil. Add the quinoa to the boiling water, reduce the heat to low, cover the pot, and let it simmer for about 15 minutes or until the water is absorbed and the quinoa is fluffy.
While the quinoa is cooking, prepare the vegetables. Dice the bell peppers and zucchini into bite-sized pieces. Peel and slice the carrots into thin rounds. Mince the garlic cloves.
Heat 2 tablespoons of olive oil in a large skillet over medium-high heat. Add the minced garlic and sauté for about 1 minute until fragrant.
Add the diced bell peppers, sliced carrots, and zucchini to the skillet. Stir-fry the vegetables for about 5 to 7 minutes, until they start to become tender.
Season the vegetables with ground cumin, ground coriander, salt, and black pepper. Stir well to evenly coat the vegetables with the spices.
Once the quinoa is cooked, fluff it with a fork and add it to the skillet with the vegetables. Stir to combine everything thoroughly, allowing the quinoa to absorb the flavors. Cook for an additional 2 minutes.
Taste the stir fry and adjust the seasoning with more salt and pepper if needed. Serve hot and enjoy your Vegetable Stir Fry with Quinoa.
