Ingredients

  • 800 g shrimp (peeled, deveined)
  • 6 cups mixed greens
  • 2 units avocado
  • 2 cups brown rice (cooked)
  • 1/4 cup cilantro
  • 2 units lime
  • 3 tbsp olive oil
  • 3 cloves garlic
  • 1 tsp salt
  • 1/2 tsp pepper

Instructions

Prepare the shrimp by patting dry with paper towels. In a bowl, combine 2 tablespoons of olive oil, the juice of 1 lime, minced garlic (3 cloves), salt, and pepper. Add the shrimp and toss to coat. Let it marinate for 15 minutes.

While the shrimp is marinating, dice the avocados and chop the cilantro. Slice the remaining lime into wedges for serving.

In a large skillet, heat the remaining 1 tablespoon of olive oil over medium-high heat. Add the marinated shrimp and cook for about 2-3 minutes on each side, until pink and opaque. Remove from heat and set aside.

In a large salad bowl, combine the mixed greens, diced avocado, chopped cilantro, and warm cooked shrimp.

Incorporate the cooked brown rice into the salad and gently toss everything together to combine evenly.

Serve the salad with lime wedges on the side. Optionally, drizzle with an additional splash of lime juice before eating.
