Wash the mixed berries thoroughly under cold water and drain them well. Remove any stems from the strawberries and cut them into halves or quarters, depending on their size.
In a small bowl, mix the honey with the plain Greek yogurt until well combined. If you're using chia seeds, stir them into the yogurt mixture now to allow them to start absorbing the liquid and expand.
Spoon a layer of the yogurt mixture into the bottom of 4 serving glasses or bowls.
Add a layer of the mixed berries over the yogurt, distributing them evenly among the glasses or bowls.
Sprinkle a layer of soy-free granola or oats + nuts mix over the berries.
Repeat the layers once more: yogurt, then berries, and ending with granola on the top.
Drizzle a final touch of honey on top for added sweetness, if desired. Chill in the refrigerator for 5-10 minutes before serving for a refreshing treat.
