Preheat your oven to 350°F (175°C).
Grease a 12-cup muffin pan with olive oil or use cooking spray to prevent sticking.
In a large mixing bowl, crack the eggs and whisk them until they are fully beaten.
Add the salt, black pepper, spinach, and cheese to the beaten eggs and mix well to combine.
Evenly distribute the egg mixture among the muffin cups, filling each about 3/4 full.
Place the muffin pan in the preheated oven and bake for 20-25 minutes, or until the egg muffins are fully set and a toothpick inserted into the center comes out clean.
Remove the muffin pan from the oven and allow the muffins to cool slightly in the pan before transferring them to a wire rack.
Serve warm or store in an airtight container for a quick breakfast option throughout the week.
