Bring a large pot of salted water to a boil. Add the pasta and cook according to package instructions until al dente. Drain and set aside.
While the pasta is cooking, peel and thinly slice the carrots. Set aside.
Cut the chicken breast into bite-sized pieces. Season with salt, pepper, dried oregano, and dried basil.
In a large skillet, heat 1 tablespoon of olive oil over medium-high heat. Add the chicken pieces and cook until golden brown and cooked through, about 7-8 minutes. Remove the chicken from the skillet and set aside.
In the same skillet, add the remaining tablespoon of olive oil. Add the sliced carrots and sauté for about 5 minutes, until they begin to soften.
Mince the garlic and add it to the skillet with the carrots, cooking for another minute until fragrant.
Zest and juice the lemon, then add both the zest and juice to the skillet, stirring to combine.
Return the cooked chicken to the skillet. Add the cooked pasta and toss everything together until well combined. Adjust seasoning with more salt and pepper if needed.
Serve the pasta on plates, garnished with freshly grated parmesan cheese.
