Ingredients

  • 2 pieces chicken breast
  • 200 grams fresh mozzarella
  • 2 medium tomato
  • 1/4 cup basil
  • 2 pieces ciabatta or focaccia
  • 2 tablespoons olive oil
  • 2 tablespoons balsamic glaze
  • 4 cups mixed greens
  • to taste n/a salt
  • to taste n/a pepper

Instructions

Preheat a grill pan or skillet over medium-high heat. Season the chicken breasts with salt and pepper on both sides.

Add 1 tablespoon of olive oil to the pan and cook the chicken breasts for 6-7 minutes on each side or until fully cooked. Remove from the pan and let rest for a few minutes.

Slice the fresh mozzarella and tomatoes thinly. Chop the basil leaves.

Slice the ciabatta or focaccia pieces horizontally. Drizzle or brush each side with the remaining olive oil.

On the bottom half of each bread piece, layer the sliced chicken, mozzarella, tomatoes, and basil. Drizzle with balsamic glaze.

Top with the other half of the bread to form a sandwich.

Return the sandwiches to the grill pan or a panini press and cook for about 2-3 minutes per side until the cheese is melted and the bread is golden brown.

In a large bowl, toss the mixed greens with a drizzle of olive oil, salt, and pepper to taste.

Serve the panini hot with the mixed leaf salad on the side.
