In a small bowl, mix the rolled oats with the vanilla extract (if using) to lightly coat the oats with flavor.
Take a serving glass or bowl, and add half of the Greek yogurt at the bottom.
Layer half of the mixed berries on top of the Greek yogurt.
Sprinkle half of the oats over the berries, followed by half of the sunflower seeds.
Drizzle half of the honey over the seeds and oats layer.
Repeat the layers with the remaining yogurt, berries, oats, sunflower seeds, and finally drizzle with the remaining honey.
Garnish with a few extra berries or a small sprinkle of sunflower seeds for presentation, if desired. Serve immediately or store in the refrigerator for up to one day.
