Preheat your oven to 180°C (350°F).
Take the loaf of bread and slice it into even pieces, about 1 inch thick, if not pre-sliced.
In a small bowl, mix together the olive oil, salt, pepper, and dried herbs if using. Brush this mixture onto one side of each bread slice.
Arrange the bread slices on a baking tray, oil side up. Place the tray in the preheated oven and bake for about 10 minutes, or until the bread is golden brown and crispy.
While the bread is toasting, pour the vegetable soup into a saucepan and heat over medium heat until it reaches a gentle boil. Stir occasionally to ensure it's heating evenly.
Once both the soup is hot and the bread is toasted, serve immediately. Ladle the soup into bowls and accompany with pieces of warm, crunchy bread on the side.
