Prepare the vegetables by washing and chopping the spinach, bell pepper, and mushrooms into small pieces.
In a medium-sized bowl, crack the eggs and whisk them together. Add salt and pepper to taste and continue whisking until well combined.
Add the chopped spinach, bell pepper, and mushrooms to the egg mixture and stir until evenly mixed.
Heat 1 tablespoon of olive oil in a non-stick skillet over medium heat.
Pour the vegetable and egg mixture into the skillet, spreading it evenly. Let it cook for about 3-4 minutes or until the bottom is set.
Carefully flip the omelette over using a spatula and cook for another 2-3 minutes or until the other side is set and the vegetables are cooked through.
While the omelette is cooking, toast the slice of whole-grain bread in a toaster or on a separate pan until golden brown.
Slice the avocado into thin slices or mash it, depending on your preference.
Once the omelette is cooked, slide it onto a plate. Serve it with the toasted bread and topped with sliced or mashed avocado.
