Preheat your oven to 400°F (200°C).
Peel and cube the sweet potatoes. Place them on a baking sheet, drizzle with 1 tablespoon of olive oil, and season with salt and pepper. Toss to coat evenly. Roast in the preheated oven for 25-30 minutes, or until tender and lightly browned, turning halfway through cooking.
While the sweet potatoes are roasting, cook the brown rice according to the package instructions.
In a small bowl, combine 2 tablespoons of olive oil, the juice of the lemon, minced garlic, chopped dill or parsley, 1/2 teaspoon of salt, and 1/4 teaspoon of pepper to make the marinade.
Place the salmon fillets in a baking dish. Pour the marinade over the fish, making sure each piece is well coated. Bake in the oven (still at 400°F / 200°C) for 12-15 minutes, or until the salmon is cooked through and flakes easily with a fork.
While the salmon is baking, melt the butter in a large skillet over medium heat. Add the green beans and sauté for about 5-7 minutes, or until they are crisp-tender. Season with a pinch of salt and pepper.
Once everything is cooked, plate the dishes: serve a salmon fillet with a portion of roasted sweet potatoes, sautéed green beans, and a serving of brown rice. Garnish with additional fresh dill or parsley if desired.
