Cut the chicken breast into bite-sized pieces and season with salt and pepper.
Peel and slice the carrots into thin rounds. Mince the garlic cloves and chop the onion.
Heat olive oil in a large skillet over medium heat. Add chicken pieces and cook until browned, about 5-7 minutes. Remove the chicken from the skillet and set aside.
In the same skillet, add the chopped onion and minced garlic. Sauté for 2-3 minutes until the onion becomes translucent.
Add the sliced carrots to the skillet and cook for another 5 minutes, stirring occasionally.
Sprinkle flour over the vegetables and stir well to combine. Cook for 1 minute to eliminate the raw flour taste.
Gradually whisk in the chicken broth, followed by the milk. Stir continuously to prevent lumps from forming, cooking for 2-3 minutes until the mixture thickens.
Return the chicken pieces to the skillet. Reduce the heat to low, cover, and let simmer for 10-15 minutes, allowing the flavors to meld and the chicken to cook through.
Taste and adjust the seasoning if necessary. Garnish with freshly chopped parsley before serving.
