Heat the olive oil in a large pot over medium heat.
Add the mixed vegetables and sauté for about 5 minutes until they begin to soften.
Stir in the mixed herbs, salt, and black pepper, cooking for an additional minute to release their flavors.
Pour in the vegetable broth and bring to a boil.
Add the pasta and beans (including the liquid from the can) to the pot. Stir to combine.
Lower the heat to medium-low and simmer for 10-15 minutes, or until the pasta is cooked al dente.
Taste and adjust seasoning as needed. Serve hot and enjoy your Minestrone Soup!
