Ingredients

  • 500 g Pork shoulder
  • 8 pieces Corn tortillas
  • 100 g Pickled red onion
  • 4 pieces Radish
  • 1/2 cup Cilantro
  • 2 pieces Lime
  • 1 cup Cabbage slaw (optional)
  • 1 teaspoon Salt
  • 1/2 teaspoon Black pepper
  • 2 tablespoons Olive oil

Instructions

If using a pressure-cooked or slow-cooked pork shoulder, shred the meat into bite-sized pieces. Heat 1 tablespoon of olive oil in a large skillet over medium-high heat. Add the shredded pork, season with salt and black pepper, and cook until the edges are crispy. This should take about 8-10 minutes.

While the pork is cooking, prepare other toppings. Slice the radishes thinly and set aside. Chop the cilantro leaves roughly. Cut the limes into wedges.

Warm the corn tortillas by heating them in a dry skillet for about 30 seconds on each side or until they are warm and pliable. You can do this while the pork is crisping.

Once the pork is ready, assemble the tacos. Layer each tortilla with a portion of crispy pork, a small handful of cabbage slaw (if using), a few slices of radish, and a generous sprinkling of pickled red onion.

Top each taco with a sprinkle of chopped cilantro and a squeeze of lime juice. Serve immediately while warm.
