Ingredients

  • 6 whole eggs
  • 1 cup spinach
  • 1/2 cup feta cheese
  • 1/2 cup cherry tomatoes
  • 1 tbsp olive oil
  • 1/2 tsp salt
  • 1/4 tsp black pepper

Instructions

Preheat your oven to 350°F (175°C).

Crack the 6 eggs into a large bowl. Add 1/2 teaspoon of salt and 1/4 teaspoon of black pepper. Whisk the eggs until they are well beaten.

Heat 1 tablespoon of olive oil in a non-stick ovenproof skillet over medium heat.

Add 1 cup of spinach to the skillet and sauté for about 2 minutes or until wilted.

Add 1/2 cup of cherry tomatoes to the skillet and cook for another 2 minutes, stirring occasionally.

Pour the beaten eggs into the skillet, making sure they spread evenly across the pan.

Sprinkle 1/2 cup of crumbled feta cheese evenly over the top of the eggs.

Let the frittata cook on the stovetop for about 3-4 minutes or until the edges start to set.

Transfer the skillet to the preheated oven and bake for an additional 10-15 minutes or until the center is set and the top is golden brown.

Remove the skillet from the oven and let the frittata cool for a few minutes. Slice and serve warm.
