Ingredients

  • 12 oz ground beef
  • 6-8 pieces corn tortillas
  • 16 oz enchilada sauce
  • 15 oz black beans
  • 1 cup shredded cheddar cheese
  • 1 cup cooked rice
  • 1 medium onion
  • 2 tbsp olive oil

Instructions

Preheat your oven to 375°F (190°C).

Dice the onion.

Heat 2 tablespoons of olive oil in a large skillet over medium heat. Add the diced onion and sauté until translucent, about 5 minutes.

Add the ground beef to the skillet and cook until browned, breaking it apart with a spatula as it cooks. Season with salt and pepper to taste.

Once the beef is browned, drain any excess fat from the skillet.

Add the enchilada sauce, black beans (drained and rinsed), and cooked rice to the skillet. Stir to combine and let it simmer for 3-5 minutes.

Spread a thin layer of the beef and bean mixture over the bottom of a 9x13-inch baking dish.

Layer 3-4 corn tortillas over the mixture, overlapping if necessary.

Add a layer of the beef and bean mixture over the tortillas, followed by a sprinkle of shredded cheddar cheese.

Repeat the layering process with the remaining tortillas, beef and bean mixture, and cheese.

Finish with a layer of cheddar cheese on top.

Cover the baking dish with aluminum foil and bake in the preheated oven for 20 minutes.

Remove the foil and bake for an additional 10 minutes, or until the cheese is melted and bubbly.

Let the casserole cool for a few minutes before serving. Optionally, garnish with chopped cilantro or sliced jalapeños if desired.
