  • 100 g chorizo sausage
  • 50 g bell peppers, diced
  • 30 g onion, diced
  • 1 tbsp olive oil

Begin by preparing the ingredients. Dice the bell peppers and onion. Cut the chorizo sausage into small chunks.

In a medium skillet, heat 1 tablespoon of olive oil over medium heat. Add the chopped chorizo and cook for about 5 minutes, or until the chorizo releases its oils and begins to brown.

Add the diced onions and bell peppers to the skillet. Sauté for another 3-4 minutes, until the onions are translucent and the peppers are slightly softened.

In a small bowl, crack the eggs and beat them with a fork until well mixed. Season with salt and pepper to taste.

Pour the beaten eggs over the chorizo and vegetable mixture in the skillet. Let the eggs sit for about 30 seconds so they begin to set.

Gently stir with a spatula, pulling the eggs from the edges towards the center. Repeat this process until the eggs are cooked to your preference, about 3-4 minutes for soft scrambled eggs.
