Heat 1 tablespoon of vegetable oil in a pan over medium heat.
Slice 1/2 of a medium ripe plantain into thin rounds.
Pan-fry the plantain slices in the heated oil until they are golden brown on both sides, around 2-3 minutes per side. Remove from the pan and lay them on paper towels to drain excess oil. Sprinkle a pinch of salt on each.
While the plantains are cooling, prepare the topping. In a small bowl, mix 1 tablespoon of almond butter with 1/4 teaspoon of ground cinnamon until smooth.
Layer the pan-fried plantain slices on a serving plate.
Spread a small amount of the cinnamon almond butter mixture over each plantain slice.
Top each slice with a few pieces of sliced banana.
Serve immediately as a delightful snack or appetizer.
