Heat olive oil in a large pot over medium heat.
Add diced onion, carrot, and celery to the pot. Sauté for about 5-7 minutes until the vegetables are softened and the onion is translucent.
Add minced garlic and cook for an additional minute until fragrant.
Stir in the cooked lentils, vegetable broth, dried thyme, and bay leaf. Bring the mixture to a boil.
Reduce heat and let the soup simmer for about 20-25 minutes, allowing the flavors to meld.
Season with salt and black pepper to taste. Remove the bay leaf before serving.
Ladle the soup into bowls and enjoy your hearty Vegetarian Lentil Soup!
