Chop the walnuts into smaller pieces if they are not already chopped. This will add a nice texture to the parfait.
Take clear serving glasses or jars to layer the parfait.
Start by adding a layer of plain Greek yogurt (about 1/3 cup) to the bottom of each glass.
Add a layer of mixed berries over the yogurt (about 1/4 cup), spreading them evenly.
Sprinkle a layer of granola over the berries (about 2 tablespoons).
Drizzle around 1 teaspoon of honey over the granola for added sweetness.
Repeat these layers until all the ingredients are used up or the glasses are full. You should be able to make 3-4 layers depending on the size of your glass.
Top with a final layer of yogurt and a few mixed berries. Sprinkle the chopped walnuts on top for a crunchy finish. Drizzle the remaining honey over the top.
Serve immediately or refrigerate for up to 2 hours before serving to let the flavors meld.
