Preheat oven to 400F.
Thinly slice pickles of choice and pat them dry.
On a parchment-lined tray, sprinkle a thin layer of cheddar on one side and another layer further down to make two 'slices'. Lay out 4-5 pickle slices to form a rectangle, season if desired, then add another thin layer of cheese.
Bake for 19-20 minutes until golden and crispy. Remove from the oven, let it cool slightly, and gently peel.
Assemble with your favorite sandwich toppings.
