Ingredients

  • 800 g Plain Greek yogurt (2% fat)
  • 120 g Nut-free granola
  • 400 g Mixed berries (strawberries, blueberries, raspberries)
  • 4 tsp Honey (or maple syrup)
  • 1 zest Lemon zest

Instructions

Wash and pat dry the mixed berries carefully, and if using strawberries, hull them and slice them into halves or quarters, depending on their size.

Zest the lemon using a fine grater or zester, taking care to only scrape the outermost yellow skin, not the bitter white pith underneath.

Prepare four serving glasses or bowls for layering the parfaits.

Start by spooning about 100 g of Greek yogurt into the bottom of each glass.

Layer about 30 g of nut-free granola over the yogurt in each glass, spreading it evenly.

Add roughly 100 g of mixed berries on top of the granola layer in each glass.

Drizzle 1 teaspoon of honey (or maple syrup) over the berries in each glass for sweetness and shine.

Repeat the layers one more time: add another 100 g of Greek yogurt followed by another 30 g of granola and 100 g of mixed berries in each glass.

Finish off by drizzling another 1 teaspoon of honey (or maple syrup) over the top and sprinkling the lemon zest on each parfait.

Serve immediately for a refreshing breakfast or dessert, or refrigerate for up to 2 hours before serving to allow the flavors to meld.
