Ingredients

  • 4 cups plain low-fat Greek yogurt
  • 2 cups mixed berries (strawberries, blueberries, raspberries)
  • 1 cup nut-free granola
  • 4 tsp honey
  • 4 tbsp chia seeds
  • 4 sprigs fresh mint

Instructions

Wash and gently pat dry the mixed berries. Hull the strawberries and slice them if they are large. Keep the blueberries and raspberries whole.

In a medium-sized mixing bowl, combine the plain low-fat Greek yogurt with 2 tablespoons of chia seeds. Stir well to mix thoroughly.

Take four serving glasses or bowls. Start layering by adding about 1/4 cup of the yogurt-chia mixture at the bottom of each glass.

Add a layer of mixed berries over the yogurt mixture, distributing evenly among the four glasses.

Drizzle 1 teaspoon of honey over the berries in each glass.

Sprinkle about 2 tablespoons of nut-free granola over the honey-drizzled berries in each glass.

Repeat the layering process by adding another 1/4 cup of the yogurt-chia mixture, followed by berries, another drizzle of 1 teaspoon of honey, and a final layer of granola for each glass.

Top each parfait with a sprinkle of the remaining chia seeds (1 tablespoon divided among the four parfaits) for texture.

Garnish each glass with a sprig of fresh mint, if desired, for added flavor and decoration.
