Heat 1 tablespoon of vegetable oil in a large skillet over medium heat. Add the ground beef and cook, breaking it apart with a spoon, until it's browned and fully cooked, about 8-10 minutes.
Drain excess fat from the skillet. Add the packet of taco seasoning and 1/4 cup of water to the beef. Stir well to combine, then simmer for 5 minutes, allowing the flavors to meld together.
While the beef is simmering, heat the remaining 1 tablespoon of vegetable oil in another skillet over medium heat. Fry the corn tortillas one at a time until they're just crisp on the edges but still pliable, about 1 minute per side. Place them on a plate lined with paper towels to drain excess oil.
Once the beef is ready, assemble the tacos. Place a small amount of the beef mixture onto each tortilla.
Top the beef with shredded lettuce, diced tomatoes, and a sprinkle of cheese. Add a dollop of sour cream on top, if desired.
Serve the tacos immediately while they're warm and enjoy your classic Mexican Tacos!
