In a large skillet over medium heat, add 1 tablespoon of butter or oil. Let it heat for a minute.
Add the 1/2 cup of chopped onion to the skillet and sauté for about 3-4 minutes until the onion becomes translucent.
Add 2 cloves of minced garlic to the skillet and cook for another 1 minute until fragrant.
Add 150 g of mixed mushrooms to the skillet. Cook while stirring occasionally until the mushrooms are browned and have released their moisture, about 5-7 minutes.
Pour in 1/2 cup of vegetable broth & cream substitute. Stir to combine, and bring the mixture to a simmer. Let it simmer for an additional 3 minutes to allow the flavors to meld.
Stir in 1 cup of cooked whole-wheat pasta until well combined and heated through, about 2 minutes.
Season the stroganoff with salt and black pepper to taste.
Remove from heat and sprinkle 2 tablespoons of chopped fresh parsley over the top before serving.
