Preheat a large skillet over medium-high heat. Add 1 tablespoon of olive oil.
Add the sliced chicken breasts to the skillet. Cook for about 5-7 minutes until the chicken is browned and cooked through. Remove the chicken from the skillet and set aside.
In the same skillet, add the remaining 1 tablespoon of olive oil. Add sliced bell peppers and onion. Cook for about 5 minutes until they're tender and slightly charred.
Return the chicken to the skillet. Add the fajita seasoning and stir well to combine. Squeeze the juice of one lime over the top. Cook for another 2-3 minutes to blend the flavors.
Mash the avocados in a bowl. Dice the tomato and chop the cilantro finely. Add them to the mashed avocados.
Add a pinch of salt and pepper to the guacamole and mix well. Set aside.
Warm the whole-wheat tortillas in a dry skillet or microwave for a few seconds until pliable.
Assemble the fajitas: Place some chicken and pepper mixture onto each tortilla, add a spoonful of guacamole, and garnish with additional cilantro if desired. Serve immediately.
