Ingredients

  • 300 g ground beef
  • 4 pieces large lettuce leaves
  • 100 g cheese, shredded
  • 0.5 cup enchilada sauce
  • 1 tbsp olive oil
  • 1 tsp salt
  • 0.5 tsp black pepper

Instructions

Preheat your oven to 350°F (175°C).

Heat olive oil in a skillet over medium heat. Add the ground beef and cook until browned, about 5-7 minutes. Season with salt and black pepper.

Once the beef is cooked, drain any excess fat.

Spread a small amount of enchilada sauce on each lettuce leaf, enough to lightly coat the surface.

Divide the cooked beef evenly among the lettuce leaves. Sprinkle shredded cheese over the top of the beef on each lettuce leaf.

Roll up each lettuce leaf to enclose the filling, creating a wrap. Secure with toothpicks if necessary.

Place the lettuce rolls in a baking dish and pour the remaining enchilada sauce over the top.

Sprinkle the remaining cheese on top of the enchilada sauce.

Bake in the preheated oven for 10-12 minutes or until the cheese is melted and bubbly.
