In a bowl, combine the juice of 2 lemons, 2 tablespoons of olive oil, 1 tablespoon of chopped rosemary, 1 tablespoon of chopped thyme, and a pinch of salt and pepper. Mix well to create the marinade.
Place the chicken breasts in a sealable plastic bag or a shallow dish. Pour the marinade over the chicken, ensuring that each breast is well-coated. Seal the bag or cover the dish and refrigerate for at least 30 minutes to allow the flavors to penetrate the meat.
Preheat the grill to medium-high heat. Oil the grill grates lightly to prevent sticking.
Remove the chicken breasts from the marinade and allow any excess marinade to drip off. Place the chicken on the grill.
Grill the chicken for about 6-7 minutes on each side, or until the internal temperature reaches 165°F (75°C) and the juices run clear.
Once cooked, remove the chicken from the grill and let it rest for a few minutes before serving.
