Ingredients

  • 3 cups plain Greek yogurt (non-soy)
  • 1.5 cups mixed berries (strawberries, blueberries)
  • 1 cup soy-free granola or oats + nuts mix
  • 3 tbsp honey
  • 3 tbsp chia seeds

Instructions

In a medium bowl, combine the mixed berries (strawberries and blueberries) with 1 tablespoon of honey. Gently toss to coat the berries in the honey. Set the berries aside to let them macerate for a few minutes, which will enhance their sweetness.

In a separate bowl, mix the Greek yogurt with the remaining 2 tablespoons of honey. Stir well to combine for a slightly sweetened yogurt base. If using chia seeds, add them to the yogurt mixture and stir to incorporate evenly.

Prepare four serving glasses or bowls. Start by adding a layer of the Greek yogurt mixture into each glass or bowl (about 1/4 cup per serving).

Add a layer of the macerated mixed berries over the yogurt layer (dividing equally among the servings).

Sprinkle a layer of the soy-free granola or oats + nuts mix on top of the berries (roughly 1/4 cup per serving).

Repeat the layering process until all ingredients have been used, finishing with a layer of berries and a sprinkle of granola or oats + nuts mix on top for garnish.

Serve immediately, or refrigerate for up to 2 hours if you prefer the parfaits chilled.
