BBQ Chicken Skewers

By Shona Bonewit

Total: 45 minutes
Main CourseGrillChicken

Ingredients

  • 1.5 lbs Chicken breast
  • 1 cup BBQ sauce
  • 2 large Bell peppers
  • 2 large Onions
  • 12 pieces Skewers
  • 1 tsp Salt
  • 1/2 tsp Black pepper
  • 2 tbsp Olive oil

Instructions

1

If using wooden skewers, soak them in water for at least 30 minutes to prevent burning. Meanwhile, preheat your grill to medium-high heat.

2

Cut the chicken breasts into 1-inch cubes. Season them with salt and black pepper.

3

Cut the bell peppers and onions into 1-inch squares, roughly the size of the chicken pieces.

4

Thread the chicken, bell peppers, and onions onto the skewers, alternating between each.

5

Brush the skewers lightly with olive oil to prevent sticking.

6

Place the skewers on the preheated grill and cook for 10-12 minutes, turning occasionally.

7

Brush the BBQ sauce generously over the skewers during the last 5 minutes of grilling, ensuring an even coat on all sides.

8

Once the chicken is cooked through (internal temperature should reach 165°F) and has a nice charred appearance, remove the skewers from the grill.

9

Let the skewers rest for a few minutes before serving to allow the juices to redistribute.
