Ingredients

  • 75 g Brown lentils
  • 200 g Sweet potato
  • 100 g Canned tomatoes
  • 1 medium, diced Onion
  • 2 cloves, minced Garlic
  • 1 medium, diced Carrot
  • 2 tsp Ras el hanout or curry spices
  • 1 tbsp Olive oil
  • 200 ml Vegetable stock
  • 60 g Couscous
  • 2 tbsp, chopped Cilantro

Instructions

Rinse the brown lentils under cold water and set aside.

In a large pot, heat 1 tablespoon of olive oil over medium heat.

Add diced onion and minced garlic to the pot. Sauté for about 3-4 minutes until the onion is translucent.

Stir in the diced carrot and sweet potato cubes. Cook for an additional 5 minutes, stirring occasionally.

Add the Ras el hanout or curry spices to the pot, stirring well to coat the vegetables evenly. Cook for 1 minute until fragrant.

Pour in the canned tomatoes, rinsed lentils, and vegetable stock. Stir to combine.

Bring the mixture to a boil, then reduce the heat to low, cover, and let it simmer for about 25-30 minutes until the lentils and sweet potatoes are tender.

While the tagine is simmering, prepare the couscous according to package instructions or boil water and pour it over the couscous in a bowl, cover and let it sit for 5 minutes, then fluff it with a fork.

Once the lentils and sweet potatoes are cooked, season the tagine with salt and pepper to taste.

Serve the tagine over the prepared couscous and garnish with chopped cilantro.
