Heat the oil in a large skillet over medium heat.
Add the ground beef to the skillet. Cook until browned, about 7-10 minutes, breaking it apart with a spoon as it cooks. Drain excess fat from the skillet if necessary.
Season the browned beef with salt and black pepper. Transfer the cooked beef to a plate and set aside.
In the same skillet, add the cauliflower rice. Cook over medium heat for about 5-7 minutes until tender. Season with salt and black pepper to taste.
Divide the cooked cauliflower rice among serving bowls.
Top the cauliflower rice with the cooked ground beef, diced avocado, salsa, and shredded cheese.
