Finely chop the onion and garlic.
Heat the olive oil and 1 tablespoon of butter in a large pan over medium heat.
Add the onion and garlic to the pan, sautéing until the onion becomes translucent, about 5 minutes.
Stir in the Arborio rice and cook for 2-3 minutes until the edges of the rice grains become translucent.
If using, pour in the white wine and stir until it's completely absorbed.
Begin adding the broth one ladle at a time, stirring frequently. Allow each addition to be absorbed before adding the next. This should take about 18-20 minutes depending on your heat level.
Once the rice is creamy and al dente, remove the pan from the heat.
Stir in the remaining tablespoon of butter and the grated Parmesan cheese. Mix well until creamy.
Season with salt and pepper to taste.
Serve immediately, garnished with additional Parmesan if desired.
