Ingredients

  • 2 cups plain Greek yogurt (2%)
  • 1 cup mixed berries (strawberries, blueberries, raspberries)
  • 2/3 cup nut-free granola (oats + seeds)
  • 2 tbsp chia seeds
  • 2 tsp honey (optional)
  • 1 tsp vanilla extract (optional)

Instructions

In a medium-sized bowl, mix the plain Greek yogurt with the vanilla extract (if using) until well combined.

Take 4 serving glasses or bowls and spoon 2 tablespoons of Greek yogurt into the bottom of each.

Layer 1 tablespoon of chia seeds over the yogurt in each glass.

Top the chia seeds with 1/4 cup of the mixed berries in each glass.

Sprinkle a tablespoon of nut-free granola on top of the berries in each glass.

Repeat the layers with the remaining yogurt, berries, and granola, dividing equally among the glasses.

Drizzle half a teaspoon of honey over the top layer of each parfait, if using.

Serve immediately or refrigerate for up to 2 hours before serving to allow the flavors to meld.
